The SETI.USA mail server is using Sendmail. Ease of configuration is largely dependent on the distro being used. Apparently Ubuntu has a really good Sendmail setup and a lousy Postfix setup. Gentoo is just the opposite. The Gentoo devs added Sendmail, but included no post install setup whatsoever. Ubuntu put in a lot of post install setup and made it much easier to configure.
