    Spaghetti with Raisins



    Spaghetti with Raisins

    1/4 kg spaghetti
    3 or 4 tablespoon (s) (soup) margarine
    50 gr raisins
    50 gr fresh champignon
    1 unit (s) chopped onion (s)
    suffice as chopped parsley (s)
    suffice as salt
    suffice as nutmeg
    50 gr of grated cheese
    1 cup (s) (coffee) white wine

    Cook the spaghetti al dente and leave. Melt margarine in a frying pan, add the onion and mushrooms. Fry until the onion is well browned.
    Add raisins, white wine and nutmeg. Season with salt to taste. Let it for about 10 minutes.
    If desired, thicken with a little flour. Put the sauce over the pasta, sprinkle parsley and grated cheese.

    Way too many carbs in that for me, but there was a time when that would have been a good meal!


    If it's not broken, give me 5 more minutes!

    I cannot either Justgeo1 only a small bit. A ridiculous portion.

    They don't let Duke eat anymore. Now I cook for others but I like to cook and see if the food is tasty.

    I spemt 2 years in Northern Italy (Verona) and my wife is from there. I showed her the recipe and all she said was "no way!"

    This is a Brazilian way of cooking spaghetti. There are two things that the Italian community in Brazil does best than in Italy, pizza and spaghetti.

    The kinds and quality of cheeses and the other products that exists in Brazil gives a great help. Another thing is the translation of the recipes that are very difficult "uva passa" is not raisins but I couldn't find better word on English dictionary. I will post one image that may help.

    I have long thought about posting or not this recipe but I can guarantee that is one of the best on mix flavors between the sweet and the salty with flavor and texture of the mushrooms with the flavor of the nutmeg.

    Uva Passa - Raisins


    Cogumelos - Mushrooms


    Noz Moscada - Nutmeg


    Now maybe you could help me to find the right words.

    Those are just golden raisins. My wife just doesn't eat "sweet and salty" at the same time. Salty is in the meal but sweet is for desert.

    That is a question of taste, nothing to say about that. I like mix flavors.

    When we make tomato based spaghetti sauce, a little brown sugar does wonders to mellow out the acid of the red tomatoes. Sweet and salty are great together. Just think of chocolate covered pretzels.
